Fat, then low-fat, then carbs, then sugar, then ultra-processed food: a forty-year sequence in which the field says “it’s complicated and confounded” and the bridge zone ships a confident single-cause story on repeat. Each reversal is a real finding stripped of its hedges and conditions and sold as a clean actionable line, leaving the audience with a working model of nutrition worse than none. The specialist consensus was itself more contested than a clean story admits (food-industry conflicts run through nutrition epidemiology), but the whiplash the public experienced is a bridge-zone artifact, not a property of the science.
